Bread

Whole-wheat, flax seed bread.

Our everyday bread-machine loaf.

290 ml water
3 T sugar
1 t salt
15 gm butter
(1½ T milk powder)
300 gm bread flour
100 gm whole wheat flour
1 t dried yeast

Optional ingredients:
70 gm cooked wheat berries (If you like, blend them with the 290 ml water.)
3 T raw sunflower seeds
2 T flax seeds
1 T chia seeds

Place ingredients in the bread machine in the order above. (If you add wheat berries, they can go in before the flour.) Make a small well in the center of the flour to add the yeast.

Set bread machine for 1.5 size loaf and turn it on (or set the timer and turn it on). Be sure to remove the bread from the machine as soon as it is done. Cool on a wire rack. 

If you have more than you need, slice it, place squares of cooking paper between the slices, put the loaf in an airtight bag, and freeze it. When you want bread, take out what you need, place it on a cooling rack, and it will thaw within 15 minutes or so, and you will have very fresh, soft bread.

Sometimes we end up with crusts that don't get eaten. A winning way to use them is as garlic toast.



Place in the microwave in a small dish:

1½ T butter
1 clove garlic - finely minced

Heat until butter is melted. 

Toast bread on one side, turn and spread the garlic butter on the un-toasted side. Toast. Be careful, butter burns easily.
