Chocolate Banana Cake


½ C softened butter (room temperature butter is good)
1 C sugar
1 egg
1 t vanilla
1½ C mashed ripe bananas (about 3 medium - Mash them with a fork on a plate.)
1½ C whole wheat flour
1 t baking powder
1 t baking soda
½ t salt
3 T cocoa powder (or more up to ¼ C)
1-2 T milk

Preheat oven to 180ºC (350ºF). Line an 8" square pan with cooking paper.
  1. Whisk butter and sugar until creamy. Add egg and vanilla; beat until thoroughly combined. Mix in bananas. 
  2. Add the flour, baking powder, baking soda, and salt. (Be sure to sift the baking soda so no lumps go into the batter.) Stir until it's just mixed.
  3. Divide batter in half. Add cocoa to one half. Add 1-2 T milk to make that batter the same consistency as the plain half. Spread in baking pan.
  4. Spread the rest of the batter on top of the chocolate layer.
  5. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool on a wire rack. This is even better the next day, and makes a great breakfast.
